Matcha okara cake

By using okara powder instead of white flour, you can make it low-carb and high protein. ( for an normal recipe,14.5g of protein and 4.9g of carbs. Also 7.6g of fiber so it improves intestinal environment)

What is okara ?

-okara is by-product of soy milk and tofu production. When you make them from soybeans, there is a left over pulps and that is called okara. 

Why I use?

-Okara is a good source of plant-based protein, coming from soybeans. Also it absorbs water so you will feel filling and satisfying.

Ingredients

  • 20g okara powder
  • 10g lakanto (or other sweetener)
  • 5g matcha powder
  • 3g baking powder
  • 1 egg
  • 50g milk

for a matcha sauce, blend 100g yogurt, 5g matcha powder, and 1g psyllium (if you have).

vegan version

when you cook in a vegan version, the texture will be more moist and gorgeous.

  • 20g okara powder
  • 10g lakanto
  • 5g matcha powder
  • 3g baking powder
  • 75g vegan yogurt

How to make

-mix okara powder, lakanto, matcha powder ,and baking powder in a bowl

-add 1 egg and milk

-put the bowl into a microwave and heat it for 3-4mins/500w

-once you take the bowl out from the microwave, turn the bowl over on a kitchen paper soon to make a moist texture

-place the cake on a plate and put toppings as you like

Prepare in 10 minutes, highy recommended for breakfast!!
